The rumen, through its strong muscula­ture, allows mixing and churning of digesta. The movement of the rumen mixes the contents, promoting turnover and accessibility of the coarser forage particles for regurgitation, cud chewing, size reduction, and microbial digestion.

The rumen, also known as a paunch, is the largest stomach compartment in ruminants. [1] The rumen and the reticulum make up the reticulorumen in ruminant animals. [2]

The rumen contents are in three layers: a small gas cap, middle fibrous mat layer and a lower liquid layer. The gas cap consists of carbon dioxide and methane, products of fermentation. The fibrous mat layer is composed of long dietary fiber materials that help stimulate rumination. Figure 10.2 illustrates the layers of the rumen.

The solid portion left behind in the rumen typically remains for up to 48 hours and forms a dense mat in the rumen, where microbes can use the fibrous feedstuffs to make precursors for energy. True ruminants, such as cattle, sheep, goats, deer, and antelope, have one stomach with four compartments: the rumen, reticulum, omasum, and abomasums.

Rumen pH below 5.7 dramatically reduces dry matter intake in cattle. If cattle gorge on high-starch feeds or there is a lack of effective fiber in the diet (leading to inadequate saliva secretion to buffer the rumen), rumen pH can remain low, and intake may drop off at the next feeding.
