I've stuck with a similar batter but swapped the red wine for a soak of rum ... wrap the fruit cake in a layer of plastic wrap and then aluminum foil once cool. Slice and serve the next day.

There's nothing like a rum soaked cake ... Dark Rum is mixed in with the batter and then added to the glaze. At times, I can even say that I felt a little bit of a buzz after having a slice.
