Click on the Page Layout tab on top of the Excel editor window. Under the Page Setup section, click on the down arrow icon below the Orientation option (the second option in the section).

There is a set of pre-defined themes where you can select your preferred theme and apply the changes. If you want to change the theme on Excel, go to the Page Layout tab > Themes Themes .
